Chilled Carrot Soup with Ginger and Lime
3 cups fresh carrot juice
1 small rip avocado
1/3 cup coconut milk
¼ cup lime juice
6 drops of stevia or 2 tbsp. honey
1 tbsp grated ginger
¼ tsp cayenne
¼ tsp celtic sea salt
Few sprigs of cilantro for garnish.
Puree all ingredients in a high speed blender until completely smooth.
Taste for seasoning.
You can warm the bowls in which the soup is served and eat it at
room temperature. You can put it in a saucepan over very low heat, stirring
continuously, warming it to 110 degrees, so as not to destroy the live enzymes.
